Promised Land Salad
Based on recipe by Annette Reeder - The Biblical Nutritionist
This salad is a delicious reminder of the great love of our Father God, Whose promises never fail. He promised a land of ‘milk and honey’, bountiful goodness in abundance. And when we live in His promised land, we have access to all His goodness. For our pleasure and our good.
Promised Land Salad
Prep time: 15 minutes | Total time: 15 MinutesIngredients
3 Cups Cooked Grain, like Barley, Farro, Couscous, or whole grain pasta *see notes.
¼ Cup Chopped Figs
¼ Cup Pitted & Chopped Dates
¼ Cup Halved Grapes
¼ Cup Pomegranate Seeds
Dressing
¼ Cup Olive Oil
2 Teaspoons Honey
2 Teaspoons Red Wine Vinegar optional Pomegranate Vinegar
1 Teaspoon Honey Mustard, or regular Mustard
Toppings
¼ Cup Wheat or Barley Cereal for a crunch, I have used a no sugar added granola (sweetened with dates)
2 Tablespoons Parsley
DIRECTIONS
Combine barley, figs, dates, grapes, and pomegranate seeds in a large bowl.
Place oil, honey, vinegar, and mustard in a separate bowl - whisk together.
Toss the salad with the vinegar dressing to coat. There may be more than you need. Adjust to your own liking.
Add salt and pepper to taste - if you need any.
Just before serving add cereal and toss to distribute.
Garnish with fresh chopped parsley.
Serve on a bed of bright greens!
NOTES
I have prepared this salad in a few different ways. As presented in the photo, you can use pasta like Fusilli or Bowties and lay on a bed of spinach or power greens. Or just use cooked grain like Farro or Barley and present it as a beautiful salad without greens.
You can also add any kind of berries for color and bursts of fruity goodness.
Note that these changes would alter the nutrition facts slightly.
